The first lovely sweet red strawberries go hand in hand with the last elderflowers. As if strawberries aren’t lovely enough on their own! Of course they are – but you will love this combination and it looks great too. The small elderflowers will spread their taste through the jam and entertain your taste buds – lovely on oatmeal, yogurt, buns or ice cream.
All you need:
500 grams of strawberries
300 grams of sugar
Juice from ½ lemon
4 tablespoons of elderflowers from about 4-5 heads
Rinse the strawberries and remove the green stem. Cut the strawberries in half and place the elderflowers on a newspaper and leave them for 10 minutes – then you are sure that the elderflowers are free of insects. Take a fork and pull off the small flowers into a cup. Pour the strawberries, lemon juice and sugar in a saucepan. Let it boil for about 10-12 minutes. Remember to stir in the pan often until the jam has become thick. Finally, pour the small elderflowers in the jam and stir so the flowers spread through the jam. Pour the jam into sterilized jam jars!
