Peach Jam

In Provence in the South of France all small local markets have the most delicious fresh peach jams – it goes without saying that their juicy sweet peaches help a lot. We love them – that is simply the taste of French summer at its best. Perhaps you have a peach tree that has borne fruit or you found some real good ripe peaches – and you want to turn them into a nice jam. If so – then you will need:

500 grams of ripe peaches
Juice from ½ a lemon
Grains from ½ vanilla pod
250 grams of sugar

Wash your peaches, remove the stones and cut the flesh into large cubes. Put all ingredients in a large saucepan. The first 15 minutes on low heat. When the juice has come of the fruit, turn up the heat and let it all come to a good boil. When the jam has the right consistency you pour it into sterilized jars!
