In spring and early summer every Sicilian market abounds with fresh strawberries and Bronte pistachio nuts and of course oranges. We love these ingredients – and have therefore combined them in this delicious jam. In this way we could also take some of beautiful Sicily with us home. The jam tastes great on toast or a good freshly baked muesli bun.
Strawberry jam with pistachios
2 handfuls of strawberries
2 espresso cups of sugar
Juice from half a lemon
4 tsp. of chopped neutral pistachio nuts
Rinse the strawberries, remove the green stalk and cut them into smaller pieces and place them in a saucepan. Peel the oranges and chop the fruit meat into smaller pieces and place them in the pan. Pour the lemon juice over and let the ingredients boil for about 10-12 minutes until the jam has the desired consistency. Just before the jam is done stir the pistachios in – and let them boil for a minute.
