Driving home for Glühwein

No December without the fantastic Christmas mulled wine also known as Glühwein. There are many different variations of this wine, light or dark, strong or mild and with different spices – but make your own extract to get it to taste exactly as yummy as you want it. A homemade Glühwein tastes spicy, strong, sweet and fresh. We worship this hot drink and find many excuses and occasions to make a cup or two. So if you too are a sucker for warm socks on your feet and a warm glass in the hand, then make it happen by creating your own extract today. Beware, since you drink this wine warm, the alcohol will go straight to your head and give you a jolly Christmassy buzz!

The Glühwein extract:
(For approximately 12 people)
100 grams of brown sugar or cane sugar
½ liter of water
3 cinnamon sticks
15 cardamom pods
4 star anise
2 bay leaves
1 teaspoon of peppercorns
1 teaspoon of whole allspice
1 teaspoon of whole cloves
1 teaspoon of dried lemon grass

Put all the ingredients in a pan and bring to the boil. Pour the extract in to a sterilized canning jar when it has cooled down – put it away in the refrigerator until needed. We do extract a week before we need it, so it is ready for the next Sunday in Advent or Christmas party. The longer the extract is allowed to steep, the better.

If you want to make your own filling for the Glühwein you can also make it a couple of days in advance:

The Glühwein filling:
200 grams of raisins
3 dl brown rum
1 dl Cointreau

And finally, the Glühwein:
Make the Glühwein you on the same day as you drink it. Sieve the glorious Glühwein extract and pour the liquid into a large pan with:

2 bottles of red wines (definitely not your finest)
5 dl of mixed booze from the drink cabinet (like port wine, brandy, Grand Marnier or Cointreau)
The peel from an organic orange
The peel from an organic lemon
The juice from two oranges
150 grams of chopped almonds (you can also put them in whole)

Warm the Glühwein. Make sure it does not boil and the max. temperature is  80 degrees. Remember to taste as you go along in regards to the booze and it might need a little extra sugar. Take the Glühwein filling and pour in the batch just before serving.
