Get a Chinese kick with Kiwi Jam

Kiwis are beautiful green fruit jewels and are originally from China. They are totally delicious to use in preserves. In addition to this, they have a fantastic color and add a lovely exotic touch to your jam. Kiwis are also rich in vitamin C, K and E and may help to lower your blood pressure – and if you also eat the skin, you get a proper dose of fiber. We do not, but we do eat kiwi jam with all kinds of food, on oatmeal in the morning, on cheese sandwiches and as an “add on” when having delicious Thai Food …

Kiwi Jam
5 kiwis (approximately 450 grams when they are peeled and chopped)
1 Granny Smith (you will need both the peel and the apple)
150 grams of pineapple
Juice from one lime
1 dl of pineapple juice
250 grams of cane sugar
½ vanilla pod

Peel the apple and chop the green peel finely. Remove the core and cut the apple into small pieces. Put all the apple pieces and chopped peel in a pan. Add the pineapple juice. We use a juicer to make fresh pineapple juice, but you can also use readymade pineapple juice. Peel the kiwis and cut them into smaller pieces and do the same with the pineapple. Pour all the ingredients in the pan and let it all stand on the kitchen table for half an hour. Place the pan on the stove and boil it for about 10-12 minutes, remember to stir often, until the jam has become thick. Finally pour the jam into sterilized jars!
