Pickled Walnut

Christmas and nuts go hand in hand. So if you love both (which we do), then try making these orange and vanilla flavored pickled walnuts. They are a great supplement to the traditional Christmassy food and delicious with a piece of blue cheese, camembert or brie. We also use the excess syrup in salad dressings. We added a touch of Cointreau, which tastes great with walnuts. Cointreau is a French orange liqueur super scrumptious with pancakes, in mulled wine and in various Christmas pickles.

Pickled walnuts
200 grams of walnuts
1 dl of Cointreau
The peel of an orange
1 dl orange juice
½ dl water
2 ½ dl cane sugar
1 vanilla pod

Cook the walnuts in water for about 3 minutes. Drain them in a colander. Take a pan and pour in sugar, water, Cointreau, orange peel and vanilla. Bring the mixture to the boil and cook on moderate heat for about 10 minutes. Pour the pickled walnuts on sterilized jars and store them in a cool and dark place or in the fridge. Enjoy it together with all the lovely food at the Christmas Dinner.
