The lovely lilac blossoms smell great and have a very distinctive perfumed taste. You can make great delicacies out of them. How about this beautiful jam – so decorative, when it gets smeared out with all the beautiful flowers in it. The slightly bittersweet aroma tastes great with a cheese plate and is heavenly with blue cheese. How to do it:
1 lemon juice and peel (use the lemon peel at the end)
125 g of Lilac flowers
10 leaves of lemon balm
300 g jam sugar or regular cane sugar
1/3 teaspoon cinnamon (optional)
4 dl of water
Chop the lilac flowers and the lemon balm and mix it with the sugar and the cinnamon in a pan. Wash the lemon thoroughly, grate the lemon peel finely and squeeze the juice out of the lemon. Pour the lemon juice into the pan with the other ingredients. Boil the water and pour it over the mixture. Let the mixture rest for 10 minutes. Put it on the stove and cook it for about 10 minutes until the lilac flowers become soft (cook it a little longer if it is ordinary cane sugar). It should not boil too long as the jam will thickens too much and becomes hard. Remove the pan from the heat and finally add the grated lemon peel and stir well. Pour the jam in to sterilized jam jars!
