Rhubarb Vodka

Rhubarb is gorgeous and generous – we absolutely love it in jams, cordials and in somewhat stronger drinks. We also love flavored and infused vodka. So this Rhubarb Vodka is a win-win for us. Just imagine in a month you can sit in the sun enjoying a cool Rhubarb Vodka drink with a twist of peppermint and lemon balm and with a splash of soda water or homemade lemonade.  All you have to do is:

Rhubarb Vodka
600 ml of vodka
3 small slim rhubarb stalks
2 lemon balm stalks
2 peppermint or mint stalks
2 tablespoons of Honey

Put all the stalks in a sterilized bottle. Dissolve the honey in the vodka using a spoon – pour the vodka mix in to the bottle. Close it off and shake it. Store the vodka in a cool and dark place. Shake the bottle once in a while. The vodka will be ready to drink in a month. Just strain out all the stalks and pour the vodka back in the bottle again…and enjoy!
