We love teashops… such a lovely feeling walking around smelling the great teas and planning which tea to take home. Last time we were there we came across a lovely black tea with rhubarbs and ginger. It smelled like heaven and we thought we have to try this out with some of the rhubarbs from the garden. Here is our homemade version of:
Rhubarb and Ginger Tea
100 grams of organic ginger
300 grams of rhubarbs
50-100 grams of black or green tea
Wash the rhubarbs and cut them into thin slices. Wash the ginger and cut it into small pieces. Cover a baking plate with baking paper and put the ginger and rhubarbs on the plate. Dry it all for about 1- 1½ hours in the oven at 100 degrees (Celsius). We keep the oven lid open just a little bit with a wooden spoon to make sure it doesn’t get too hot in there – also a good way to remember that something is being dried in the oven.
When dried take the rhubarbs and ginger and mix it with about 50-100 grams of black or green tea depending on how intense you want the rhubarb ginger flavor. Put the kettle on and enjoy a nice cupper.
