Citrus fruits have amazing tastes. Some are bitter, others are sweet and some are even sour. Citrus fruit make wonderful cordial and there are numerous combinations depending on whether it is for adults or children or for which purpose the cordial is to be used. We love it with gin so we make a citrus cordial especially for gin cocktails. Together with the gin, sparkling water and a few slices of your favorite citrus you have a winner. Here is a recipe where we have played with 6 different citrus variants, you can try it out or create your own special citrus cordial with your favorite citrus fruits.

Citrus Cordial
the juice of 1 lemon
the juice of 1 lime
1 organic lemon
2 organic limes
1 organic pomelo
2 organic grapefruits
1 organic orange
3 organic blood oranges
40 grams citric acid
1- 1, 5 kg of organic cane sugar
1 ½ liter of boiling water

Squeeze the juice out of 1 lemon and 1 lime and pour it into a large soup pan or bowl. Then wash 1 lemon and 2 limes and cut them into thin slices and add them to the juice. Take the grapefruit, pomelo and oranges and wash them and peel the skin off (otherwise the cordial becomes too bitter) and cut them into slices and add them also to the mix. Sprinkle citric acid over. Now pour the boiling water into a bowl with the sugar and stir until it is dissolved – pour the mixture over the fruit pieces. Put a cloth over and store it in a cool room / fridge for 3-5 days. Stir the cordial daily. Pour the juice through a clean cloth and on to suitable bottles. We pour ours on glass bottles and also freeze the juice in plastic bottles. You can keep it in the refrigerator for about 14 days.
