The beautiful elderflowers are everywhere in gardens, parks, hedge groves and in the forest. They are simply fantastic and have a very aromatic taste that goes well with many summer dishes and cakes. Here are 2 very easy recipes for elderflower salt and sugar. Go for them on a sunny day, so you can dry them outside (and get some sun while making it!).
2 dl salt
2 tbsp. fennel seeds
Flowers from 6 elderflower screens
Peel of one lemon and one lime
500 grams of cane sugar
Flowers from 10 elderflower screens
Place salt and sugar on a baking sheet and let it dry in the sun. If the sun does not want to help, put them in the oven at around 50-80 degrees for 30-45 minutes or until it is completely dry. Let them cool and put them in an airtight container.
