Viking butter with ramps

Ramps Butter

An additional buttery preserve, which is very delicious and easy to make with ramps, is of course butter. The butter gets a gorgeous green color, it tastes delicious and fresh and it will remind you of garlic and chives. Enjoy this ramps butter with a steak, a yummy piece of bread or very soon with new potatoes.

Ramps butter
250 grams of butter
2 handful ramps leaves
1 tsp. of Dijon mustard
The juice from half a lemon

Wash the ramps leaves and dry them off. Put all the ingredients in a food processor and mix it until it all gets a nice creamy consistency and there are no big lumps of ramps leaves left. Take some parchment paper and put the butter on the paper. Roll it into a sausage, shape it like a square or use a butter form. Put it in the refrigerator. Start the grill and serve the butter with a delicious steak or a nice piece of fish from the grill.
